Chef rumours & gossip: Michelin star recruitment & news


So as an early Christmas present to you, my readers, I’ve got some juicy rumours for you which are yet to be announced.

Replacement for Wignall

First up, chefhermes.com can reveal who will be replacing the soon to be departing MIchael Wignall at the 2Michelin starred Latymer. As Wignall  is currently Executive chef overseeing all food operations at Pennyhill park, recruiting somebody who could replace him would have been nigh on impossible with the candidates available. It is my understanding that the new role will only be for the 50 cover Latymer restaurant, currently holding 5Rosettes & 2Michelin stars.

The shortlist of three candidates included a 3Rosette chef, a Head chef from a 2Michelin star & the eventual successor; Gareth Ward from Ynyshir Hall. Ward fits the bill perfectly for the Laymer, an up and coming chef with clearly a drive & determination to achieve greater things. Despite its location the Reens have virtually consistently recruited talented chefs who can achieve the desired Michelin star status, with the exception being Paul Croasdale.

At the time of publishing Ward had yet to comment on the speculation.

Are the Samling on the hunt for a second star?

With the departure of long serving Head chef Ian Swainson to the South coast, The Michelin starred Samling in Cumbria were clearly keen to make a statement of intent with his replacement. Step up eleven year Le Manoir veteran Nick Edgar who has been looking for his next position since leaving the Oxfordshire hotel, as Head chef, in September.

British culinary legend to retire?

As over heard at a recent pre-Christmas gathering. A doyen of the British culinary scene for over 30years, this legend has now appeared to have decided to take things a little slower. Whilst his PA denied it was true & that the meal had even taken place, my source is usually on the money with their information. We shall see, keep your eyes peeled for the press release to appear in the Caterer 😉
