New chef & change of direction for Mallory Court?

After the recent disappointment in Tripadvisor reviews & the loss of a Michelin star, clearly something had to give at Mallory Court.

The 3Rosette & Red star, Relais and Chateaux property, seem to want to change the direction & style of the fine dining food offering, with its newest recruit.

Out goes John Footman, formerly of The Goose, Le Manoir & now resident at The Oxford Kitchen since October last year:

And in comes Paul Foster from Tuddenham Mill in Suffolk, where for nearly the past 4years he’s been plying his trade (actually started in March 2010, for clarity). He comes via such kitchens as WD50, Restaurant Sat Bains, French Laundry & Le Manoir.

In January 2012 Foster won 3rosettes, but has always hankered for the elusive Michelin star.

I have to say, this is either a very bold move by Eden Collection and/or a massive gamble. Foster’s food comes from the past trend of foraging & the Noma inspired train of thought. Does this mean that he’ll have to dumb down his food to make it more accessible & acceptable to Mallory Court’s customers, or is it perfect timing to re-invent himself?

Eden collection have declined to comment at this time, concerning this story.
